Food coloring is used both in commercial food production and in domestic cooking. Alkaloids are generated by various living organisms, especially by higher plants. The alkaloids content in plants is usually within a few percent and is inhomogeneous over the plant tissues. Depending on the type of plants, the maximum concentration is observed in the leaves , fruits or seeds , root (Rauwolfia serpentina) or bark (cinchona). Beside plants, alkaloids are found in certain types of fungi, such as psilocybin in the fungus of the genus psilocybe.
Oleoresins represent the complete flavour profile of the spice. It contains the volatile as well as non volatile constituents of spices. Oleoresins can be defined as the true essence of the spices and can replace whole/ground spices without impairing any flavour and aroma characteristic. Oleoresins are obtained from spices by extraction with a non-aqueous solvent followed by removal of the solvent by evaporation.
